Vegan lasagna with spinach

Another great dish with vegan meat. I am not converted but sure slip this kind of meals a couple of times a week to my meat eating family. And if I doo not tell them they would not know

Very nice lasagna, where we used vegan meat and added a layer of fresh spinach.


750g fresh spinach

300 g vegan mince

1 onion, diced

2 cloves of chopped garlic

300 ml tomato sauce

1 tsp of oregano

1tsp dried mixed spice

salt and pepper to taste

6 slices of vegan mozzarella

White sauce

1 cup almond milk

2 Tbsp flour


Melt some vegan butter. Add flour an fry for a couple of minutes. Add almond milk, pepper and salt and stir till the sauce is thick.

Saute onion and garlic for a couple of minutes. Add vegan mince and fry for another 5 minutes.

Add herbs, salt and pepper and tomato paste. Mix well.

wash spinach and saute in a little bit of oil.

Assemble lasagna. First lasagna sheets, then mincemeat mixture, then lasagna sheets then spinach. Again lasagna sheets and pour white sauce on top. Arrange slices of mozzarella

Bake for approx 30 minutes on 220 Degrees Celsius
